These are light brown when they're in a can, but the ingredients of my can are "white beans," water, tomato puree, sugar, salt, spices, onion powder, garlic powder. My can says-- "No Name beans in tomato sauce." There's a picture on it of brown (in colour) beans.

Two things can change white canned beans' color.
First, over cooking to the point of burning them. This happens when you leave them cooking without adequate liquid.
Second, the beans *can* absorb flavor and color from the liquids and spices you add while they're cooking. Since they're already soft, they won't absorb as much as if you'd started with dried beans.

I'm sure that if you over cooked the beans then they would probably start turning a darker color.....

most canned beans stay the same color when you cook them unless you burn them of course so I have never had them change colors on me....

now the dried beans that you have to cook yourself will change colors when they are cooked.....they are a lighter color in their packages and then turn darker when they are good and done.....

I haven't experienced that - and I just made a pasta dish with cannellini beans last night. They stayed white.

Maybe if you cooked them in a sauce or liquid they may take on that color? I've never paid attention!

Well, maybe, kinda sorta.

They are not stark white (like cooked rice) to begin with. But any seasonings you add (spices or veggies) will change their appearance.

They can, plus they usually pick up the colors of your veggies and such that you put in with them.
