Most parents don't even know about the Hatch Amendment.
Most parents are not involved in their children's educations and leave everything up to the schools.
Most parents prefer their children be taught humanism at school and teach their children religion at home.
Three reasons, take your pick.

Humanism is taught on schools, because it is important for every adult to know what humanism is all about. It is part of general knowledge, just as you'd expect every well educated adult to have learned about Zeus and the other Greek gods. You don't expect people to believe the Greek myths, but you expect to at least have heard about it.
So I'd expect that schools would teach about humanism, and chritianism, and buddhism, and islam, and Darwinism, and..., not because I want well educated adults to belief them all, but to enable them to make a wise decision which belief is worth worshipping. It also helps people to understand what other people belief and why they do certain things. Understanding each other better makes it easier to accept others behaviour.
