I told them I was a bricklayer, and if they asked more, I explained that I spent most of my day sitting on the toilet laying bricks.
You can also say that you're a volunteer proof-texter for the newspaper, and you check all the want ads after they go to press.
Also, you can say you're self-employed. If they ask more say you haven't worked out the business end yet, which has been cutting into your profit margin quite a bit.
Nowdays, I say I'm a veteran, ask if they support their troops, and tell them I've never gotten a check from them yet.
OK, that's not true, but that's because I'm a student.

One way is to say, I don't know...
as I do to, How are you? how you doing?
It causes a momentary brain freeze and a puzzled smile.
or,
well, I'm presently involved in doing research into the psychological effects of always having free time for recreation.

my best friend always gives this answer when someone ask "so what do you do?"
her response is "HOME SECURITY"
(she has a job as being an elementary school teacher and the answer always responds back to guys hitting on her)
