Milk has to be inoculated with the yogurt bacteria and kept at the right temperature to make yogurt. It is a cultured food, like bread. With bread dough, you add yeast and it grows and makes the gases to have the bread rise. With yogurt, it has to develop the bacteria. The yogurt bacteria is healthier for your body than yeast.
