In my library in itunes how do I change the order of artists from numbers then A-Z not A-Z then numbers?

I haven't seen a way to do this for your entire library, but you can change the sorting information for each song individually.

i.e., to put a song by 10,000 Maniacs at the top of the list, select the song, go to File.....Get Info. Click the "sorting" tab. In the "sort artist" space insert aaaa. This will force the song to the top of your alphabetical artist list without modifying any of the information that you see in the iTunes library.
