Recently, I was astounded to find that people put toppings under the cheese when making pizza.
I mean, I guess it isn't that strange when you think about it, but I've never seen it before. I've always put the cheese first, then the toppings.
Is there any real "correct" way to do it?

does it matter? they both taste good. It really depends on what your getting, if you were getting veggie then some would be under the cheese and some would be on top of it. Same with pepperoni pizza, I've noticed that as well, the pepperoni is either on top or bottom. But I think that the reason why people put it on top because you taste it more. If it's under the cheese sort of takes over the taste. Both ways are good.

The short answer is, toppings on top. Remember, toppings often need to be exposed to the heat of the oven, not insulated from it by the cheese (think of sausage or tomato slices or onions).

But consider for a moment the genuine Italian pizza, like one from Naples, for example. In Italy, pizzas aren't as heavily loaded with stuff as they are here in the US -- they commonly have only one or two toppings -- and the dough itself is considered an important part of the creation. Typically made and baked cracker-thin, the dough must be tasted and savored just as are the other elements. Usually the cheese -- almost always fresh mozzarella -- is interspersed with the other items, not placed on top of or underneath them.

But occasionally a pizzaiola breaks with tradition, runs amok, and makes a loaded pizza. In those cases, the toppings are usually on top of the cheese. As in "toppings."

It's just a personal preference.
When I make pies at home I put topping underneath the cheese because prevents them from falling of the pizza.

Pizzerias put cheese on top of toppings if the slice was originally made without any. Say you order pepperoni and they don't have any slices with pepperoni already made. Well, they're not going to make a whole new pie with your topping just because you ordered one slice. Chances are they'll put pepperoni on a plain slice or "cheese slice" and then put some cheese on top of that just to keep the newly added topping from floating off the slice during and after reheating.

If you're saying there are places that prepare the pizza this way from the get-go, I'd say it's definitely non-standard. But "wrong" ? I dunno, I mean is it wrong to have warm beer? Is it wrong to have egg sandwiches with mayo and hot sauce for breakfast? Is it wrong to eat cone shaped pastries pointy end first? That's up to you to decide.

It depends on what type pizza you're cooking...in a true chicago style the toppings go down first and then cheese then more toppings then a parmesan herb mix...(like italian seasoning)...In New york the cheese went down first...In California...they dont know anything about pizza so never mind;-)...Sorry Californians!!

When I was a teenager I worked at Pizza Hut. We would put most of the cheese on the bottom, then the toppings, then a little more cheese. This helps the toppings to stick on the pizza better. If the pizza was a pepperoni pizza, all the pepperoni went on top. This is because it made it crispier and yummier :)

I like my toppings on top of the cheese. Only because I like combination pizza and so like eating certain ingredients together; ie mushroom with bell pepper. If the ingredients are under the cheese, I can't see what I'm eating to try and get it all in one bite!

I believe that pizzerias put the toppings on top of the cheese (hence; 'toppings'), but I like to put extra cheese on top of the toppings to : 1. hold the toppings in place,(especially if they are chunky), and 2. because I like extra cheese.

I usually get either a plain cheese pizza or with minimal toppings, unsliced, and put my own extra toppings on and then more cheese to hold them on, and heat them in the oven until the cheese melts. Saves on extra topping charges, and makes a nice hot cheesey pizza!

Drizzle it with a little olive oil too, to get that extra bit of oomph!

I don't think there is a correct way. I think putting the toppings on top of the cheese is more common (at least where I live).

There is no correct way, but I prefer under the cheese. Both under and on top is even better though!
