The Eucharist is made of unleavened bread. During the Mass the bread and wine are "Tran-substantiated" into the body and blood of Christ. "Trans....." is a 50 cent word meaning that the bread and wine, if scientifically tested, would appear as just that. But their essence has been changed by the consecration of the priest into the body and blood of our crucified Lord.

I'm not sure what you're driving at.
The significance of the Eucharist is that is a communal meal. Bread and Wine are the traditional elements, but the significance is that the ceremony binds the entire congregation together into a single, unified act. That is why both the Eucharist and the Church were called the "Body of Christ."

Are you asking if there's any difference between Eucharist and wine, and bread and fermented grape juice? Physically, no. Just as there's technically no difference between my college degree and a fancy piece of paper. But there's a reason why I frame my college degree. There is a purpose behind symbolism. The uncreative will never understand.

I don't really think it matters, it's the symbolism that is important.
I just want to say that at the last supper, they were definitely drinking wine. Unfermented grape juice was impossible to get then and wine was a big part of the culture at large.

The bread must be without yeast. Bread with yeast utilizes fermentation to puff it up and it is an example of sin. Also, likewise Grape juice should be used. Wine is fermented and old, Jesus blood was not fermented or old.

He (Jesus) did insisted that the bread must be made from a certain kind of cereal, and the wine must be made from a certain kind of fruit. Not doing ANY of these would detach oneself from Him. Christians who are not practicing these, please quote your country's prohibition on certain food groups, otherwise you're just wasting your time being a christian.

It is the sentiment that is important, not the physical components.
In some parts of the world, where alcohol is prohibited, they use water.
