Clarified butter - it'll be pretty rich, though. If you use salted butter, omit the salt from the brownie recipe. If you've already added the salt, and only have salted butter, I wouldn't do this! :)
Anyway to clarify 1/2 cup of butter, melt it over low heat; skim the foam off the top, and *gently* pour the butter out of the pan (you wanna leave the stuff that is on the bottom of the pan IN the pan.)

The same amount of applesauce for sure, I substitute it for oil in muffins and banana bread....it should work in brownies too and will make them lower in calories. Enjoy!

Applesauce can be substituted and is low in fat.

Assuming you don't have canola oil or similar, use applesauce. Otherwise use butter or margarine, but they'll change the texture.
