Since the Bible shows death to be like sleep. I do not believe that is what they saw. I do know there are chemicals in the body that are released at times of stress to help the person cope with what is happening. These chemicals have been shown to release in the brain at the point of death.
I believe that is God's way of helping people cope with the unnatural act of dying. I think if they were left to actual death they would have no thoughts. None of them were declared brain dead, it was typically a stop in blood flow but the brain had not yet been dead. Had it been dead, there would be no return because brain cells would be dead. Causing problems like not being able to perform certain activities they previously could upon revival.
A stroke can cause some of the brain cells to die. It does not cause them all to die. If they all died, there would be no return to life.
Nutshell: a hallucination caused by chemicals in the brain designed by God to make death more bearable.
EDIT: as for people who seem to know what has happened while they were "dead". The only answer I can give is that we, as humans only use 10 % of our brains. It is possible that our brains are capable of much more than we imagine. Telepathy? moving objects with our minds? Maybe a type of mental transfer can occur while in this pre-death state due to the chemcial shift in the brain.

I think these people have been deceived by the devil. They actually do believe they have seen these things; sort of like a very vivid dream. The devil's purpose is to make people unafraid of death so that they won't be concerned about their souls. When people report these wonderful stories about feeling peaceful and seeing soft, comforting lights, it makes a lot of people feel OK with death and believe in a false concept of God until it's too late to do anything about it.

Hell/Heaven is a matter of opinion. The Bible is very much open to interpretation. Therefore, I have no opinion of those who claim to have seen Heaven/Hell.

Are you talking about the people who wrote the books 90 minutes in heaven and 23 minutes in hell? If you didn't read, you should, it's really interesting. I believe it's true though, I mean why would they lie about it or even think about it (who want to go to hell?). Another thing is, why wouldn't God show people heaven or hell when in the bible, Paul saw the end of days, how is that any different?Even Abraham or Moses, they were contacted by God and they actaully didn't know God or even think about. It's a way how God connects with that person to bring him back to Him. I think everybody has a purpose in life, the change of events come together is not a mistake or accidantal but by design and God has special connection and relationships with us, inorder to fulfill our time here. Utimately these men that went to hell and heaven became Ministers, they became closer to God and to tell others about it. I believe we are spirtual beings, and it is a way to get people a glimpse of reality of where they would go if they die or should I say be at a place they will forever live in the after life. Many people I've known have had outer body experiences and God chooses them to die or not or experience or not, so to me it's evidence that spirtuallity exists (as many people believe or live life as we are not connected to God or there is no God, but this shows that God is real and the afterlife or your destiny is real ...what you choose is real) there is a possible place outside our body, that doesn't need the mind to work and they have thoughts and remember them too! A person on utube (forgot the title) had experienced Hell, he told a story that was so detailed and not only that didn't believe in Jesus or he used to, but later believe there wasn't a God or hell or heaven, but he experienced it! He told in the story that he was in hell, in trouble pain, darkness, fear, riping his skin and clothes but then when he prayed and sang a song he thought he forgotten about Jesus, he said he saw Jesus (He said he looked like what was in the Bible very bright like the sun, brass glow to Him with white hair but couldn't see his face) and He picked him up and healed him and talked to him to him to tell others. God said he would never leave us, nor forsaken us, and that's his promise. He is always there, and I believe everyone will in their life expereince a phenomena, that is God's way to wake you up, but you either have to choose it to believe or not, and it's under God design or web of life. People afterwards may fall into doubt if this is real or not and that is the first sign of sin and how satan corrupts us to fall away from God as it said in the Bible. People have the choice to believe in it and keep it inside of them, and many people do. The Bible shows us that even in the beginning of time, human being are not much different as they are today, and that God has a made us special (through our generation we are made to look, see, feel, hear etc. a certain way that is not the same as everyone esle see it), so that we may carry out our lives he accordingly plans. We are like a design of a snowflake, no one is exactly the same.
