Would kosher and other food restrictions be considered as contributions by Judaism?

Yes it would, they have a very strict diet.

I don't know if I'd say it was a unique contribution. A lot of religions have dietery restrictions of some sort.
The wording of your assignment suggests that you should be looking more for philosophies and ideas than specific law.s
