Hard Tack and Beef Jerky come to mind for the fur hunters and pioneers if that's the era you're talking about. And they made stews (rabbit and other game).

In their homes, they cooked mostly over open fires in Dutch Oven kettles.

The Colonial Williamsburg website might have some info for you.

Early Americans ate natural foods which they could grow .. and which they could hunt for.

The hunted food may consist of deer, squirrels, fish, turkey, etc.

The planted food may consist of potatoes (irish & sweet), peas, greens, onions, etc.

Some other natural foods are nuts, berries, etc.

The natural drink was water.

It depends on the era - but people cooked over open fires, on wood heaters, and they even made some of the utensils.

Some foods were also prepared by burying the food in the grounds with the coals .. or embers of the fire. Other foods were also smoked in a smoke house.

Many of the early American foods came from the home countries of the immigrants.
Pick a culture you like and focus on their foods.

Roast Lamb the traditional English way is still as popular now as it was centuries ago.
