When the words for various meats were introducted to the English language (beef, pork, mutton, venison, etc) we didn't have buffalo in the UK so there isn't a separate name. This mostly stems from the Norman invasion (1066) and the merging of language.
So you just use the word meat and qualify that with the name of the animal in front. Buffalo meat. The same with most other animals, e.g. kangaroo meat, ostrich meat. In spoken English the word meat would normally be dropped.
I ate buffolo, not I ate buffolo meat. There is an assumption that the animal is dead. If the animal is alive then that is indicated as in, I ate live grubs and insects.

Actually, that's a cow-buffalo hybrid.
I've heard 'prairie beef,' but I think that was just one restaurant's word.

Bison Meat.... you just put "Bison" in front of:
Steaks, burger, chili, rib-eye, prime rib, bratwurst...etc. etc.
