Yes they would. the subject they learn is the language they speak. Like here in the United States we learn English.
but in high school we have to learn another language so I'm learning Spanish. Or people can learn French. So in France their subject is French

It woul probably be more like Francais/Arts de langue (that's French/Language Arts in French!) as opposed to our English/Language Arts (of course i'm from the u.s.).

Of course. I'm an English teacher in Mexico. The students have Spanish class, which is the equivalent of our English class. When they go to their foreign language class (my class) they call it English. Just like you would go to Spanish or French class.

Yes they learn French, in exactly the same way we have English. They then have, language lessons, which are English plus one other language.

Same in the US, but when we take English, it is realy English Literature. I'm sure the French do the same things, just maybe French Lit instead.

Yes, they would do 'French', where kids here do 'English'.
I think they also use sentence capitals and similar punctuation to us in the U.K. ;-)
