well 60 and 80 gigs have lots of memory for game demos, games, videos, music and photos as well as gamesaves . these two also have wiireless internet and backwards compatability and memory card readers.
40 gig has the same as 60/80 but less storage space for media and it cat play PS2 games
20 gig has no wireless internet and no memory card readers and not much meory if your sons want to put downloaded music and video on it. howver if thy dont have lots music and video and you guys dont have wireless internet id suggest 20 gig
if you do have wi-fi and no PS2 games id suggest 40 gig
otherwise id go for 80 or 60 gg depending on how much media you want to store on it

The age of your kids you can get away will buying alot of less expensive ps2 games for them to play on the ps3 so you'll want the 80 gig because it plays ps2 and ps1 games.

40 gig have two usb slots in the front (less charging and additional bolt on limited) also a limited amount of games are backwards compatible
60 gig has four usb slots and is fully backwards ready
80 gig (hk import) Oh my lord
8-9's go with a 40 gig
cheaper to buy (i have a 8 year old so minimizing damage possible)

if i am not mistaken the higher gb ps3 has the ability to play games that came from the ps1 and ps2 which to me is a huge benefit as i like some of the older games.

This question is an often one, so that's my cut & paste answer:
1). 20GB has no chrome trim, no memory card reader and no wi-fi. Not manufactured anymore. Has the best backwards compatibility with PS2 games due to Emotion Engine (PS2's CPU) and Graphics Synthesizer (PS2's GPU) installed.
2). NTSC 60GB has the same backwards compatibility as 20GB version, also has memory card reader and wi-fi. Has a chrome trim.
3). 80GB - extended memory, but reduced backwards compatibility with PS2 games, it has only Graphics Synthesizer (PS2's GPU). Around 80% of PS2 games can be played. Available only in NTSC regions.
4). 40GB - can't play PS2 games at all (all PS2 chips were removed), has 2 USBs instead of 4, no memory card reader, has wi-fi. Avalable in black and white colors. White is on sale only in Japan. Uses 65nm technology (lower power consumption). Improved cooling system. It's the latest version.
5). PAL 60GB - reduced backwards compatibility with PS2 games. it has only Graphics Synthesizer (PS2's GPU). Around 80% of PS2 games can be played.
