A russet potato is what most people consider a "regular" potato that is commonly used for baking, etc.
If you want to try a better potato (my opinion) try new potatoes, they are small, and when cooked, have a creamier consistency, and better taste. You can cook them by boiling them in some salted water, or you can roast them in your oven.

A russet is considered best for baking, texturewise. A regular (rounder) potato is best for boiling, potato salad or in stews.

Baking potatoes are chosen for their uniform size and shape. The ones that are wrapped and prepackaged will cost you more for the convenience of them being prewashed and wrapped.Russets have good flavour and are less starchy than some other varieties, but Yukon Golds are good as well.. Just look for several of roughly the same size (they cook more evenly, and at the same rate), give them a good wash. I pierce mine with a fork which seems to help them cook faster. You can roll them in a little veg oil and wrap them, or not. If they're not wrapped just keep an eye on them, when they're dry the bottoms tend to brown quicky.

Most varieties of potatoes differ in the amount and type of starch they contain. Some have a little more sugar (like the sweet potato). Others more fiber. The amount and type of starch makes some potatoes better for baking (like the Idaho) others better for boiling (like red skin).
