the color comes from the sun/chlorophil.
Same reason tomato seeds aren't red.

Because they are black. The shell of the seed is designed to protect the seed from damage, not to be part of the process of photosynthesis. Photosynthesis requires the presence of chlorophyll, which is responsible for the green colour of leaves (and onion stems). Since chlorophyll is not present in the seed coating, the seeds are not green. The better question might have been why are onion seeds black?

Most seeds aren't green. For example, cannabis sativa seeds are brown. Seeds don't have chlorophyll, which makes leaves green.

The only parts of plants that are green (there are probably a few exceptions) are those filled with chlorophyll which is used for photosynthesis. Parts of a plant not exposed to the sun have no need for chlorophyll therefore not green.
