If you can't use it up by the exp. date...you can re-radiate it to it's original freshness by microwaving it to a low boil and returning it to the refrigerator after it cools. The process is similar to pasturizing and kills any bacteria. It is important to do it in glass containers, possibly in batches.

yea you can make pudding (a lot of it) from the milk, certainly you can drink some of it. What you can't use you can freeze. Do it in small quantities so you don't have to thaw the whole thing. You don't saw what kind of milk but if its whole milk (3.5% fat) you may break the emulsion when you freeze so the milk will look funny but it will still be safe. Don't worry.

Do you have any friends or family that have children? Especially toddlers I have a 3 year old and I go through a gallon of milk SUPER FAST!!! I am sure that would be helpful to any parent. Hope this helps!!!

CREAM OF POTATO SOUP
8 or 9 potatoes
2 onions
yolks of 2 eggs
1 c. rich cream
salt and pepper to taste
peas or corn, optional
Boil together potatoes and onions. Mash thoroughly in their own liquid. Season with salt and pepper.
Beat yolks in rich cream and stir into potatoes.
Do not allow soup to boil but cook until eggs are slightly cooked.
Cooked peas or corn may always be added if desired.
CREAM OF BROCCOLI SOUP
1 bunch fresh broccoli or 2 pkgs. frozen chopped broccoli
4 cloves sliced garlic
2 tbsp. olive oil
4 c. water
1/2 to 3/4 c. milk
1 to 2 tsp. salt
Pepper to taste (a few turns of fresh pepper)
4 qt. saucepan
Blender
Peel tough skins from stalks of broccoli. Chop in pieces. Slice garlic cloves and put in 4 quart saucepan with 2 tablespoons of olive oil. Saute until golden, do not brown, it will taste bitter! Add broccoli and stir. Sprinkle with salt and pepper. Add water. Cook until tender, but firm.
Place broccoli and some of the liquid into blender. Blend until smooth. Add more water as needed. Add milk. Blend until it reaches desired thickness. Pour back in saucepan and heat on low.
QUICK CREAM OF SPINACH SOUP
1 (10 1/2 oz.) can cream of chicken soup
1 c. milk
1 (10 oz.) box spinach, chopped
Thaw spinach ahead of time. Press out moisture. Blend milk into soup. Heat. Add spinach. Serve hot. This can also be cream of carrot, cauliflower, etc.
