Generally with baked chicken I serve a green salad (bagged to speed things up) and either a baked potatoe or rice. Sometimes I will add on a vegetable like green beans.

Try these 2 recipes.
Green Bean Casserole Recipe courtesy Paula Deen
1/3 stick butter
1/2 cup diced onions
1/2 cup sliced fresh mushrooms
2 cups sliced green beans
3 cups chicken broth
1 (10 3/4-ounce) can cream of mushroom soup
1 (2.8-ounce) can French-fried onion rings
Pinch House Seasoning, recipe follows
1 cup grated Cheddar
Preheat the oven to 350 degrees F.
Melt the butter in a large skillet. Saute the onions and mushrooms in the butter. Boil green beans in chicken broth for 10 minutes and drain. Add the green beans, mushroom soup, onion rings, and House Seasoning, to taste, to the onion mixture. Stir well. Pour into a greased 1 1/2-quart baking dish. Bake for 20 minutes, then top the casserole with the Cheddar and bake for 10 minutes longer, or until the casserole is hot and cheese is melted.
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.

Scalloped Corn Bake
INGREDIENTS
1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can creamed corn

75 buttery round crackers, crushed fine
1/2 cup chopped green onions
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly butter casserole dish and set aside.
In a large mixing bowl, combine the whole corn, creamed corn, eggs, milk, crackers and green onion; mix well.
Pour mixture into prepared casserole dish.
Bake at 350 degrees F (175 degrees C) for 50 minutes.
Yields: 6 servings

You can buy rice or noodle dishes. It just takes a couple minutes to prepare.
Veggies are always good. Green beans or peas go well with chicken. Stay away from corn though..it's too much starch with the chicken.

Chicken Piccata 4 boneless, skinless, chicken breast 2 tsp. flour 2 T. + 2 tsp. butter 3-1/2 T. water 2 tsp. lemon juice Melt half the butter and saute chicken. Transfer to a platter and keep warm. Stir water into the skillet to de-glaze the pan. Bring to a boil. Stir in lemon juice and remaining butter. Stir until melted. Pour over Chicken. This goes well with corn pudding and Banana Cream Cake.

Potatoes~
Clean, peal and slice potatoes, put in a microwave safe bowl.
Slice a medium onion put in bowl. Put 1/2 stick of margarine in bowl. Season with season salt. Stir together and microwave until potatoes and onions are soft. So quick and easy and SO GOOD!!!
