I usually mix oil and vinegar at a 2:1 ratio. I need a simple, low-fat alternative.

Allow me to restate my question more clearly. The traditional vinaigrette is made by combining oil and vinegar at a 3:1 ratio. I am concerned with my fat intake and so I have modified the ratio to 2:1 resulting in a harsher yet lower fat concoction. I'm looking for a simple recipe for a salad dressing. Here are the parameters: No salt or salt containing ingredients: I'm already fat; don't give me high blood pressure. No mixes: I don't know whats in it and neither do you. No "low-fat" commercial products: you *REALLY* don't know what's in that stuff.

Believe it or not, but depending on the salad, orange juice makes an amazing salad dressing. Balsalmic vinegar and olive oil is also tasty, not sure if that's what you've been using. But, hope this helps

One dressing that I've made, which is usually well received, starts with a base of light mayo -- the non-fat type. To that, I add droplets of water and /or lemon juice (to thin it to a dressing-like consistency), and then I add seasonings (Italian seasoning, or chopped fresh herbs such as parsley, thyme), perhaps some finely minced scallion, maybe a dash of hot sauce, freshly ground pepper -- whatever you like. You can pretty much build your own flavours on that base. Mix it up about an hour or so before serving so the flavours will have a chance to blend, and refrigerate until ready to use.

Or, if calories are not the issue, then extra virgin olive oil, lemon juice and herbs are excellent (be sure the oil is extra virgin -- it makes a difference.)

the fat in olive oil is good for you, whats the big deal? its unsaturated fat and is among other things very good for your joints. use olive oil and balsamic with some basil.

oil,vinegar, digon mustard, aspinch of salt and sugar, whisk up! or balsomic vinegar and oil and curry. lettuce and pinapple bits.
