Crockpot Meatloaf

INGREDIENTS:
2 pounds of lean hamburger
2 eggs
2 slices bread, in small cubes
Milk
Ketchup
Salt and pepper
1 small onion, chopped
PREPARATION:
Beat eggs - add bread cubes. Add enough milk to moisten all. Add hamburger....squish all together with your hands. Season to taste. Place in slow cooker/Crock Pot....shape to fit, flatten. Pour catsup on top (enough to cover completely) Crock on low all day 8 - 12 hours.


Beefy Mac and Cheese

INGREDIENTS:
1 1/2 pounds lean ground beef
1 medium onion, chopped
1 envelope cheese sauce mix
1/4 cup water
1 can cream of mushroom or cream of chicken soup
1 can stewed tomatoes (15 oz)
2 tablespoons tomato paste
1 cup shredded cheddar cheese
8 ounces macaroni, cooked just until tender
PREPARATION:
Brown ground beef and onions. Combine all ingredients, except shredded cheese and macaroni, in the slow cooker/Crock Pot. Cover and cook on low for 6 hours. Add cheese and hot cooked macaroni and continue cooking for about 15 to 30 minutes longer, or until the cheese has melted and the dish is heated through.

Crockpot Lasagna

INGREDIENTS:
1 pound ground round or chuck
1 package lasagna noodles
1 teaspoon garlic powder
12 ounces ricotta or cottage cheese
12 ounces tomato paste
12 ounces shredded mozzarella cheese
8 ounces smoked sausage, diced
1/2 cup chopped onion
3/4 cup water
1 tablespoon parsley
2 teaspoons sugar
PREPARATION:
Break noodles into one inch pieces and cook in boiling salted water until slightly tender. Drain. Brown ground beef, onion, and sausage in a frying pan. Grease slow cooker or spray with non-stick cooking spray.

Pour all ingredients into the slow cooker and mix thoroughly. Cover and cook on LOW for 6 to 8 hours


Apple-Apricot Chops

INGREDIENTS:
2 pounds pork filets or chops
1 cup chopped apple
1 cup chopped dried apricot
1 medium onion, chopped
2 ribs celery, sliced in 1/2-inch pieces
1/2 cup apple juice
1/2 cup brown sugar
1/4 cup dry sherry or dry white wine, or more apple juice
salt and pepper to taste
1 1/2 tablespoons cornstarch mixed with 2 tablespoons cold water
PREPARATION:
Combine all ingredients; cover and cook on LOW for 7 to 9 hours, or 3 1/2 to 4 1/2 hours on HIGH. About 20 to 30 minutes before serving, pour liquid into a separate container to skim off excess fat. Stir in cornstarch mixture and return broth to slow cooker.

Continue cooking on low until sauce is smooth and thickened.

One of my favorites:

French Dip Sandwiches Au Jus

1 bottom round roast (i usually do 3-4 pounds)
1 package dry onion soup mix
2 cans beef broth
1 can/bottle (12 oz) dark beer

Put everything together in the crock pot and cook on low setting for 6 hours. Take the meat out and pull it apart (it will be very easy). Put the meat back into the juice and allow to cook for 1/2 hour more. Toast any type of roll you like ( usually a baguette or demi baguette works well) with a little butter on top. Put the meat on it like a sandwich serve with a little cup of the "juice" from the crock for dipping.

It even makes great leftover cold sandwiches. And I love using the leftover juice to make french onion soup.

Any combination of meat and veggies is great. Throw a store-bought marinated pork tenderloin in with some whole white mushrooms, some new potatoes cut into quarters, a couple of sliced carrots, some peeled garlic cloves, and whatever combination of seasonings sound good. I'll also pour in about a 1/4 cup of liquid: wine, veggie broth, and/or Worcestershire Sauce are great choices.
If you want to, onion is a great addition - just put it in about halfway through the cook time, or it's liable to get too soft and mushy.

Real easy - 2-4 lb pork tenderloin roast (you can also use a beef bottom round roast) seasoned (S&P, Etc), 1 can cola (not diet) - 1 package of Lipton Onion Soup Mix. That's it - cook on low for 6-8 hours and there it is! You will have a nice flavored liquid tomake gravy with.

This is my easiest one. It's for corned beef brisket.

1 corned beef brisket
2-3 potatoes, quartered
1 red onion, quartered
2-3 Tbsp minced garlic from a jar
3-5 bay leaves
1 beer
6 cups of water

Put the brisket in the crock and sprinkle the seasoning packet over it. Toss in the potatoes and onion, garlic, bay leaves, pour the beer in, then the water. Cook on high all day. It turns out so tender and good.

My best & easiest thing to cook is cabbage soup.
1 lb ground beef browned off
1 small head cabbage shredded
1 large onion sliced thinly
1 small bell pepper sliced thinly
1 large can crushed tomatoes
1 large can beef broth (I save juices from roasts and things and use instead if I can)
1 can Red kidney beans
Pour all into crock pot and stir, season well and cook on low 8 hours or until cabbage is tender. You may need to add some water or more broth to get liquid almost to top.

Busy Day Chicken

Ingredients-
1 (4 pound) whole chicken
1 1/2 cups prepared barbecue sauce

Preparation-
Cook for 8 to 10 hours on low setting. It is not a good idea to check it, as steam escapes and it takes quite awhile to reheat.

Get you an oven roaster, season it with seasoning salt, garlic powder, pepper and a cut up onion. Let it simmer on low for at least 3hrs. You'll never put a bird in the oven again .GUARANTEED. Do the same thing with a pot roast.

2lbs boneless chkn ,can of cream of mush and or cream of celery soup, cut up vegys (celery,carrots onion,mush,etc.) over rice --wild or brown is best
