They're fine. Expiration dates are "Sell by" dates. Presuming they've been properly stored, there is no problem.

Assuming they are fresh (not frozen), I would not risk it when they are 2 days out of date. Whilst the main ingredient is potato, it has been processed and there will be other ingredients which may go off more easily. Traditionally potato croquettes often have egg or milk added, either of which could make you ill if they are off, without showing any really obvious signs like mould.
If you have to take a day off work sick it'll cost you a lot more than the couple of quid to buy some new ones.

The date is most likely a "best before" date. Retailers, by law have to have a date on all food products but I would have thought that they would be fine now.
People were not dropping down dead 25 years ago before all of this packaging information.
The only winners are the Supermarkets.

Yeah unless they have mould on them. Food manufacturers often put a date on products that is a little bit early just to make sure that the food will be OK. My Fuit Corner Yoghurts will often last 3 to 4 days longer than expected. Don't worry!

Yes - they should be ok.
The manufacturer does tests for worst case conditions.
Slightly poor factory hygiene, on one day.
Lowest acceptable quality ingredients used.
Poorest quality of low temp. transport.
Poorest quality local storage.
Longest journey in a customers car on the hottest day.
Poorest quality of customer storage.
Then they add a safety factor.
Ask yourself these questions, how badly have I stored them ?
How long and hot was the journey from the store?
Adult resistance is greater than children's resistance to bacteria. I might worry about ten year olds and younger.. and don't forget to cook well.

It's perfectly fine to eat them still they'll be ok for upto a week once they are cooked through properly any bacteria in them will be killed off and ready for eating

the date on the package is a sell before date to make sure a store doesnt end up selling mouldy food and get sued. they will be fine as long as they have been stored correctly

Food does not suddenly go poisonious on expiry date.
They just won't taste so fresh. So cook well.
