Depends on what kind...are you referring to shredded bbq meat for sandwiches?
I would recommend pork loin, cut into large pieces before simmering. It shreds very fine.

For meat, I'd go with chuck roast or brisket. Brisket can be both shredded and sliced.

You need to brown the meat quickly on all sides in a very small amount of oil. Then just barely cover the meat with water. Add a piece of onion, a clove of garlic, a handful of salt, some black peppercorns (whole), and a clove or two.

Simmer covered for a couple hours, turn off heat and let meat cool in the liquid. Shred the meat, saute it in butter, and add your bbq sauce.

That's shredded bbq for sandwiches...however, I am from Kansas City, where they put a dry rub on meat, then roast it, then slice it and put the sauce on individually.

A lot depends on what you like - beef or pork. Pork can be grilled thick chops or slow cooked pork shoulder for pulled pork sandwiches. Best beef in my opinion is brisket. Slow cooked chicken or kabobs are also tasty.

I love Rib Eye, or T-bone steak. I season them with salt, pepper and oregano. I like mine done medium-rear.

Enjoy!
