I was convicted in NZ of a serious offense - I am Australian - does that mean I will have a criminal record in Australia?

I not sure. It may not show up. Now, if you were immigrating then they would most likely find out with a background check.
I make a wild guess, sorry.

No I do not think so except if Australia and New Zealand's police have an agreement to transfer criminal records. find out from your nearest police station there.
