every 3 weeks or so, my Nephew suffers from sickness. Any ideas as to what could be causing this?

sorry i do not no this but please seek medical advice .Try to keep a diary of all the foods he is eating it maybe that he has allergies to some foods e.g eggs/dairy products or other types

Sounds like emotional issues....maybe he wants to stay home from school so is making himself sick in order to get out of going.

it could be anything from allergies to emotional issues, without more information there is little else I can tell you. Suggest a pediatrician might be a good idea.
