If you plan on taking some images during Xmas, I'd purchase it now. I know it's a great camera because I've read reviews on it and was in the market for one. Ask yourself if it's worth 30-50 dollars to have a camera for Xmas and new years eve. You may just capture some great memories.

There's a good rule for consumer electronics.. wait as long as need to before buying. There's a new digital camera release every 3-6 months or less, so there's little harm in waiting, if you're on the fence.
However, if you have decided that the Canon S5is is just what you're looking for, you can probably find a good sale between now and the end of January. Some folks put on sales before Christmas to boost their 2007 sales figures; others wait until after Christmas, counting on people with gift money going shopping.
As for the camera itself, I just recommended that as one option for someone else here -- it's definitely a good buy. If you're not interested in a full SLR, that sort of EVF camera can deliver much of the power and control of an SLR in a smaller, lower cost camera. I used to own a Canon Pro90IS, which is an ancestor of today's 5IS... and that was on top of nearly fifty 35mm cameras. The resolution of the 5IS ought to approach that of the consumer-priced digital SLRs today, and Canon's image stabilization is wonderful (I own an EOS lens with stabilization, and a Canon HDV camcorder with this technology.. good stuff).
Basically, be smart.. learn what the camera usually costs (which is rarely very close to the list price) and shop around. If you know the going price, you'll better appreciate when you find a good deal. I may be a bit obsessive about it, but I usually research a new gadget 3-6 months or more before I guy it. Also, I strongly recommend visiting one at a local camera store and trying it out before you buy, just to be sure.
Also consider your "opportunity cost"... are you missing anything important to you, not having the camera today? Are there others that come close? You can be sure that Canon is a great brand. The 8Mpixels is fine for nearly any use... that's what I use today, and going to higher resolution can be a trade-off (worse performance in low light). A 12:1 lens is impressive... that's not only a longer range than any SLR lens I own, it beats both of my HDV camcorders. You may eventually want a wide-angle adaptor, but otherwise you should be pretty happy with that camera.
As well, you should know that some "online" camera stores are run by criminals, and they'll either try to sell you junk accessories to boost up the price, or may just rip you off straight. This happened to me last spring, even after years of knowing the business (fortunately, through Amazon, so they stepped up and saw I got my money back). You can trust some reputable stores.. I pretty much buy all my gear from B&H Photo, they are honest people.

Or buy locally.. you may pay a little more, but you'll have an easier return, and possibly even some customer support.

New model like S5 IS won't drop in price all that much even after Christmas.. unless new model comes out to replace it.
In that sense.. you are better off buying S3 IS.
We all buy digital camera because we need one.
So why wait?
Christmas and New Years are some of the best days to take photos and it would be silly to miss them to save.. mere $20 or so.
Beside.. digital camera will always go down in price no matter when you buy it.. so there is no point in waiting and try to save money.
If saving the money is what you want.. then get the previous model S3 IS.
If S5 IS is what you really want.. then just get it.
Here is one of the better price online.. $330 w/ 2-3 FedEx shipping.

A better comparison is the Canon Rebel xsi. Both cameras are good but the Canon tops the Nikon D40 and the Nikon D60.

I have a S3 and love it. Most of the time you do not save that much more by waiting unless you wait until it has been out for awhile.

Most items go on sale right after Christmas, so it would be best to wait.
