Eggy potatoe cheese

You could make basic potato gratin, substituting cream for eggs and omitting the onion?

1. Scoop out the inside of the potatoes and mixture with the eggs.

2. Put mixture into an ovenproof dish and sprinkle the cheese over the top.

3. Bake in the oven at 200 degrees C for about 30 minutes (check after 15 minutes.)

Or you could make potato cakes.

1. Scoop out the insides of the roast potatoes. Grate the cheese and mash it into the potatoes. Add in the eggs and mix together.

2. Form the mixture into little patties and fry in a hot frying pan.

I vote for a frittata too. My favorite doesn't require much attention at all. Mix the potatoes (sliced), egg and about 1/4 cup of the cheese (grated) with some salt and pepper in a small oven-safe pan and cook at 350 for -- well, I make a 6 egg frittata, and that's 15 minutes. I'd keep checking it, since you're only using 2 eggs. When it looks set, put the rest of your cheese on top and put it back in the oven until the cheese has melted.

This has become my standard brunch recipe (usually made with a box or bag of steam-in-the-bag vegetables in some interesting blend), and I love it because it's so easy and low-attention, and turns out nicer looking than my omelets do!

I'd simply chop the roast pots in to chunks, lightly fry them(like sauteed pots) - you may not need any oil and run some cheese through them and eat with 2 fried eggs.

You could slice the pots, place on bottom of frying pan, whisk the eggs and add a little seasoning and the cheese- pour over potatoes heat slightly, then finish off under the grill(for a spanish style omlette)- but watch the pan handle doesn't melt or get too hot.

Or- mash the pots up- add the cheese and form in to round potato cakes, lightly fry, turning till browned and eat with fried eggs on the side.

Spanish (style) omelet! Mmmmmmm.....lovely and very tasty.
Reheat potatoes on frying pan with a tiny bit of oil, if you have an onion, finely chop and cook in pan til brown, season with salt and pepper.
You can make your omelet really fluffy by separating the egg white from the yolk, whisking the whites until they're frothy and semi stiff, then gently folding the beated yolks into it. Gently spoon the egg mix over the potatoes and onion (if you have them), cook for a few minutes until bottom browns, grate cheese on top and put the whole thing (in pan) under a hot grill until its all melted and browned. Enjoy!
I like 'brainlad's' answer above by the way! That mashed potato cake idea looks lovely, I might try that myself.

Twice-Baked Potatoes




4 large baking potatoes, such as russets
1 package (3oz) cream cheese, softened
1 teaspoon minced fresh or frozen chives
3 tablespoons butter
1/2 cup grated Parmesan cheese
2 tablespoons sour cream
1 egg
1/2 teaspoon salt
dash pepper
paprika, optional
additional grated Parmesan cheese, for garnish




Scrub potatoes well; grease lightly with shortening and pierce with a fork two or three times. Bake in 400° oven for 1 hour or until fork tender. When cool enough to handle, split potatoes lengthwise and scoop out potato into electric mixer bowl. Add remaining ingredients, except egg, and beat well. Add egg and beat until smooth. Fill potato shells; sprinkle with additional cheese and paprika, if desired. Bake at 375° until puffed and lightly browned.
Serves 4.

a frittata! (type of italian omlette)

melt some butter in a frying pan, slice up the potatoes and layer them up in the pan. let it heat up a bit and then beat the two eggs with a little bit of milk and pour them over the potatoes... you might want to mix some parsley or basil in there as well and throw in whatever other veges you want!

cook it on a low heat until the egg is cooked through and then just put cheese on the top and place the pan under the grill for a few minutes so it melts...

You can mash the potatoes and make patties out of them fry on each side in a skillet with butter or margarine. Then make a cheese omelet and have hash browns and eggs. Good Luck.....(Some would just put the potatoes in the pan heat and add butter and the eggs, but I like em separate)

Breakfast - for me! Heat the potatoes, fry the eggs with a little milk (scrambled!) mix with the cheese while cooking, and I'll bring the coffee! From Tim Hortons.. do you want a regular, or a double double?
