The salivary enzyme AMYLASE.

The starch-digesting salivary enzyme AMYLASE is MIXED UP with the food chewed in the mouth. Once the food is swallowed and passed into the upper part of the stomach, AMYLASE is activated and begin to digest the food.

Some studies found that as much as 45% of ingested carbohydrates are digested in the stomach within 15 minutes after swallowing when ONLY salivary AMYLASE is at work.
