If the stars don't get the money, then who gets it? The owner of the studio? It has to go somewhere. Like sports stars - the money is there! If Shaq doesn't get an extra $6 Million a year then that $6 Million goes to the team owner. DUH!
If you want to complain about who is over paid then talk about the people who run health insurance companies, electric companies, and even non profits like Goodwill, YMCA and United Way. That is money that could be used for good things, like lowering our bills, helping sick people that they deny or for what the nonprofit was set up for in the first place.

I don't even think he needs to convince them into appearing on his show. It all boils down to the fact that they are usually in the UK anyway with the aim of promoting their current movie. To ensure that they reach a wide audience in the UK it only makes perfect sense that they go on a talk show like Friday Night with Jonathan Ross. 1: Because he is one of the highest watched (let alone paid) talk show hosts. 2: He is just about the only TV presenter that also has a TV show that is totally devoted to films and his personally recommended must see new film releases. So basically it's to both the movie stars and Jonathan's advantage for them to appear on his talk show. It's all about PR.

Given the competition and the high stakes, I would say that the people who pay the stars think they are worth it.
