Propane is fine for your average burger flipper like me. It does not add any bad taste to the food as many claim. For your barbecue purists, charcoal with various species of wood chips is the only way to go. In my humble opinion, for your quick burger or steak it really does not make that big a difference but for slowly roasted meats, such as brisket, pork or rotisserie type cooking, the use of properly banked charcoal and wood chips can make a huge impact on the flavor.
