Or half back and full back? What exactly are they a quarter, half, or full of?

Positions in terms of behind the forwards. It's from rugby. Rugby also has a five eighths position (and three quarters back)...so you can see their affinity for fractions.

The terms stuck when Rugby evolved into our current American Football game, but they were originally coined from Rugby.

It's based on their traditional positions on the field. The offensive line is the front. The quarterback is next in line. Then the "half" back, which we normally just call the running back or tail back now. Then behind him is your big man, the full back. He is the "full" back because he is the furthest back. The half back is half way back. The quarterback is a quarter of the way back from the line. With today's complex lineups and formations, the names do not always really apply, but back when the names were invented, it was more common to line up this way.
