A scribe is a copier of manuscripts. A scrivener is a public copier, especially of legal documents. An amanuensis is one who writes from dictation or copies manuscripts. They all are most likely to do it for pay.

"Scribe" is the best word to use for the situation you mentioned. An amanuensis is more likely to be a personal secretary.

The best I can find is scrivener. Possible alternatives are notary, or secretary. They're not exactly up to your definition but the tasks you described are a major part of their jobs.
