there was a central point of the internet when it was first created, but now it's like there is a star of 13 servers which branch off into different networks and devices in which can connect.

I don't believe there is one central point. I believe the servers are literally all over the place. Could you imagine the danger of a central Internet server? I don't know a lot about it, but I would be shocked to learn there's one city/location.

There is no actual "internet" as in a place or central holding point. The thing we call the internet is the conglomeration of many different interconnected computers and their users. There are many (as in global) different "holding points" for each company/user. Some users go through the phone company, some through cable...etc. Those places have different cities where they're based out of.

There is no central node of the Internet. That is one of its good characteristics. Even if servers connect and disconnect, the Internet still keeps going as an entity.
Here's some history of the Internet that you might find interesting:

There is no central point. The internet is basically a series of relay spots that sort requests, much like a post office. These spots then send your request on to the server of the web address you requested.
