Speech: No matter where life takes you, it will sometimes be necessary to speak in front of groups of people. Knowing proper public speaking skills, and having some experience in their use, will help you find the confidence you need. This will also help you present yourself well during job interviews. I took the class in high school and again in college. It really helped me get over being shy and has helped me successfully interview for many jobs over the past 40 years. In fact, I've only had two interviews that did not result in me getting hired.

clothing (fashion design) - no, just look at fashion magazines for inspiration
culinary skills - this is handy and fun
drama
speech - these two are really good to learn how to speak publicly
i'd go for drama

It depends, journalism requires different skills than debate. Debate encompasses more public speaking, so if you are afraid of that, you should stay away. Furthermore, since it is listed as "Forensics", it will probably require some reasoning skills. Journalism on the other hand will be mainly writing based.

yearbook publishing because it is soo much fun to create the pages and pick the pics.
cooking would be good to cause it is a valuble skill

Business found and Speech
Business found would give you that foundation for having your own business one day.
Speech, You will always need to beable to talk with and converse with different opinionated views. Speech class is wonderful for building self esteem!!!!
