I would like to purchase a new refrigerator with an ice maker but need to run a new water line from sink that's about 5' away from refrigerator. Is it difficult for a person without a plumbing background to do this?

Well if the refride is next to the sink no. If it is across the room then you will need to run a coper line under the kitchen. Do you have access to the basement so you can run a line?
The plumbing hook-up is simple. Go to a good hardware store and ask for a Ice maker "T" fitting. It is a preassembled "T" that lets you hook up to the cold water supply under your sink, and then reattach the cold supply back to the sink. The other opening inthe "T" is where the copper tube for the ice maker goes.

You mar need some help with this

you can buy either a saddle valve to tap into the water line or you can shut off the water and replace the angle stop with a double angle stop so you can rerun the water to the sink and use the other to run to the sink

once you decide which the water line should probably be "snaked" through your cabinetry so its hidden from view unless your sink and fridge are near each other

someone at your local home improvement store should be able to help answer questions and point you toward what to purchase, many water/ice maker kits are available but the hose/water line may not be long enough

no just buy a saddle valve, it clamps on to the water line and has a stem that Perice's the line, then you back the handle out a bit and walla, water, but hook it to the fridge first,
you will need some plastic pipe, at least 10 ft, the dia will depend on the hook up at the valve and fridge, and compression ferules and coupling nuts,
