Wow, I have so many favorites. But I'd have to agree with Sarah C, that Pink Floyd's Live at Pompeii is a fantastic film!
Another favorite of mine is 'Festival Express'. It's a classic award winning film set in Canada in 1970. Various artists including The Grateful Dead, Janis Joplin, The Band, Mashamakan, Flying Burrito Brothers, Buddy Guy, and many more, all pile on board the infamous bourbon-LSD- and-barbiturate-laced 'Festival Express' cross-Canada train tour in the summer of 1970. The film features the antics aboard the train, as well as many terrific live performances in various Canadian cites along the way. Highly recommended:

Edit - Will is correct, that Cream reunion DVD is worth checking out. Considering that all of the other answers are from 30 years ago, i'm taking a chance with recent band, but On The Road with the Dropkick Murphys is excellent. The footage was taken from their now legendary 2002 St. Patrick's Day shows in Boston. I got a chance to go this year and no band draws on the energy of the crowd more than DKM. They stop singing on numerous songs to let the audience singalong and you get chills from how loud they are.
