Get a nice large bowl or something and get a movie rental gift certificate, some microwave popcorn, a couple bottles of pop and some candy and give her a movie night gift basket
Or do a basket with some fuzzy slipper socks and some hot chocolate and marshmallow and a DVD.
Or do a spa basket with bath soaps and creams

Does she own her own home? If so, Yankee Candles always make a great gift for people you don't really know. They have all sorts of cute candle stuff - You could get her some tea light or votive holders and Christmas smelling tea lights or votives. Or, get a nice gift set from Bath and Body works - Those are always people pleasers.

You could find out where she gets her hair or nails done and buy a gift card. Or if she's a wine drinker, a nice bottle of wine and some wine accessories. Otherwise, you almost can never go wrong with bath & body products.

Go to Victoria Secret and get her the gift sets with the different perfumes or body sprays... or go to Bath and Bodyworks and buy her a gift set.

If this is her first xmas with your family, how about an xmas tree ornament indicating her first xmas and the gift cards. Might help her feel welcome and welcome to return as well as memorialize her visit.
