I think it is called terduggin although I could be wrong. It is a 10 bird roast which starts with a woodcock, inside a partridge, inside a pigeon, inside a pheasant, inside a guinea fowl, inside a mallard, inside a chicken, inside an Aylesbury Duck, inside a goose inside a Turkey. All birds have a stuffing of minced pork, goose fat, herbs and mace inside them. A good butcher should help you with this!

I think it is fairly simple and named after how many birds are actually included e.g Turkey , Chicken and partridge would be a three bird roast
I am thinking about this as a change for this year , I have seen a few being advertised by the supermarkets.

There are various combinations - a good butcher or game dealer will be able to help you.
A Goose, Duck and Chicken combination is a Gooducken, spelling may be totally wrong, but it sounds like that!
They are pre-boned of course and the meat is laid one on top the other, then rolled like a joint of meat.
It's not just one bird rammed into another like Russian dolls!

I don't know about five or six, but we once had a duck stuffed inside a goose stuffed inside a turkey. It was called a cockatrice.

A five bird roast (or however many birds there are in it).
Waitrose does a 4 bird roast that serves 15 people.

I know there's more, but the one I'm sure of is turducken, turkey, duck and chicken....(the name makes me giggle every time!!)... lol............edit... just read about one more... Osturducken... ostrich first!!!...and it seems there should be one with cornish hen or squab, too....????
