Charbroiled Hamachi Kama. When you clean a large fish there is an area between the gills and the side fins. It is also called the "Collar" or occasionally the "Cheek." When a cook cleans the fish they feed all the filet portions to the customers and then they eat the kama. Because it is closest to the head it has a higher fat content and an incredibly rich flavor. You season it with fresh cracked pepper and coarse sea salt. Brush with blended olive oil and and charbroil until cooked through. After that you basically tear it apart and suck all the meat off of it and occasionally dip it in ponzu sauce which is a light soy, sake and citrus sauce. Yum.

I love seafood. Especially crabs. Marmite crabs is my favourite with the sticky sauce. You have to try it. Deep fry the crabs for 5 minutes and remove from pot. Fry some chopped shallots and garlic. Then, add a little salt and pepper to taste. Add as much marmite as you like. This is really up to individual. Put in the fried crabs, add a little water and let it cook in the pot for atleast 15 to 25 minutes depending on the quantity of your crabs. You can also do this with prawns.
