I love cream based pasta dishes, such as alfredo and chicken guiseppe. However, whenever I try to re-heat them after a night in the refrigerator by means of the microwave or stove, the oils and cream separate and refuse to blend back into the nice, delectable mixture that they once were. I was wondering: does anyone know how to re-heat a cream-based sauce?

Yes, you have two options here. First you add about a quarter cup cream, or milk to pasta. Then you may reheat is slowly over a double broiler, or on stove, over a very low heat. Stirring constantly, so that it will not "break". I know it is easier to put in the microwave, but it will break down every time, because of uneven heating.

I add a little more milk and reheat at medium power in the microwave. Stir part way through reheating.

Try adding a little milk to it and stirring it in well while heating it. Will probably work better on the stovetop, as you will have more control of the temperature.

I would add a little bit of water to it and stir before re-heating.

you mix abit of milk through it so it breaks it all up
