It can be used in many recipes. Here is a short list of foods it is used for sersoning in:
Collard Greens
Turnip Greens
Peas of all kinds (black- eyed, purple hull peas, field peas, etc)
Beans as well...(pinto, butterbeans, baby lima beans, green beans, etc)
You can also use them in baked beans in place of bacon.
Cabbage
Boiled orka
Almost any recipe that uses fat, you can use the fatback in. Just fry a little bit in a skillet to render the fat for use. Onions sauted in fatback are great.

collard greens is the only one off the top of my head..
Check out a southern recipe book from the library... you'll be surprised how many use fat back.

Soul food type stuff, beans, greens, and such. It's kind of like bacon...you would add it for flavor.
