Everytime they cool they get crunchy.Nomatter what kind of cookie.

This is a mix of science and art, and it takes practice. It depends on the performance of your oven, the temperature of your oven, the type of cookie sheet you use, and the ingredients in the recipe. However, there are a couple general rules you can follow that will guarantee success:

1. I always save my newest, best cookie sheets for baking batches of cookies because they tend to make the cookies brown more evenly without burning.

Put them in an airtight container with a slice of bread. The bread dries out but the cookies stay moist. Don't ask me how it works. ;)

Your might be overbaking them. Try baking for a couple of minutes less. Even if they don't look completely done, their own heat will continue "cooking" them.

Depends on the kind you make, but if you cook them less and then take them out, they will still cook enough to be ready but not crunchy.

try adding a 2:1 ratio of brown sugar to white sugar. and keep them covered so they retain their heat
