QUICK PAN NACHOS

1 large can refried beans
1 lb hamburger
1 package taco seasoning
3-4 cups grated cheddar cheese
1 medium can sliced olives
1 large or 2 med chopped tomatoes
1 bunch green onions chopped
sour cream
guacamole
salsa

Brown hamburger and add taco seasoning as package instructs. While hamburger simmers, spread the refried beans into the bottom of the baking dish and place in the oven under the broiler until beans are hot all the way through.
Top beans with hamburger mixture and then spread cheese evenly over the top.

Place back under the broiler until cheese is melted. Top with green onions, tomatoes and olives.

Cut into wedges and spoon onto a plate, top with sour cream, guacamole and salsa then surround with corn chips.

Scoop up with the chips and enjoy

QUICK AND EASY TUNA FISH CASSEROLE

1 or 2 cans tuna
1 tsp garlic salt to taste
just a shake of salt
just a shake of pepper
a little over 1/2 cup of Italian bread crumbs
3/4 cup Ranch dressing
1/2 bag of egg noodles

Boil egg noodles until done; drain.
Drain water from tuna and place in a bowl. Add remaining ingredients.

Be sure mixture has a creamy enoughconsistency, and taste to see if enough garlic salt has been added. If mixture is too creamy, add more bread crumbs, and vice-versa (Ranch Dressing).

Stir in cooked egg noodles and serve immediately or place a couple slices of cheese (of your choice) on top and bake in the oven JUST for a couple minutes until the cheese melts.

Overcooking will make tuna dry.

Why not try a fish parcel. Its easy to do and doesn't take too long to cook. For each portion use a square of tin foil. place Udon noodles on each square. Place julienne vegetables on top of noodles. I use carrots, beans, peppers, courgettes etc. but use any veg. On top of this place a fish fillet ,such as gurnard, and then make up a sauce. I use light soya, sherry or saki, oyster or black bean sauce and seasoning e.g. salt and black pepper and Chinese five spice . Wrap up into parcels and bake in moderate oven for 15 to 20 mins. Each parcel makes up a whole meal. Hope this helps.

Stir fry? Just cook some meat if desired, then set it aside-add frozen stirfry veggies and sauce mix-cook veggies-add meat back to heat through if using-serve over rice.
