Grey is a neurtral color. You do need to decide if it's a color or warm grey.
So most anything will go with it color wise.

To get something to go with your gray leather sofa and have a beautiful look I would say go for a chair made of fabric rather than leather. Something with lots of color and you could choose any colors you like. Gray is a rich color which will go with blue, purple, orange, red, gold, yellow or green. Something like a paisley or strip or flowers, if you like that look, will bring out the sofa and add color and beauty to your room. Paint your walls in a soft color that is taken from the chair you purchase. Rich colors in the chair....Soft color on the wall. That will give you a rich beautiful room that feels cozy and comfy.

mixing fabric and leather is kind of taboo
It does NOT have to be the same color of leather... you can mix and match within the 'leather family'
A rust red or deep blue would look great with gray.

I would go with a non-leather upholstery, like a chenille. Like one of these:

As for color, red or wine would certainly look great. Eggplant, blue or black might also look good. I would stay away from browns or beiges - they might clash with the gray.
