Beacasue french toast is actually made w/ a custard base, which include milk, eggs, and usually sugar. If you are using straight eggs, you've probably got some pretty eggy bread!

Without the milk, you'd have nothing but fried egg on your bread. This same procedure goes for frying chicken too. I add cinnamon and a touch of vanilla to my french toast. It makes it real yummy.

Without the added liquid you would basically have a piece of toast covered in egg. The milk helps thin the mixture.

because that is how you make French toast. Otherwise, it is just scrambled eggs with some toast in it.
