60 miles really is nothing. Dealers do a a lot of trading, and when they do this, the vehicles are driven. In addition, many customers want to see how a vehicle handles on the highway, which can add miles.
It is not considered a demo unless it has been actually put into demo service. Also, the manufacturer reserves the right to drive any vehicle prior to delivery. These vehicles will typically come with a stamp on the windshield stating it was driven by the manufacturing plant. I hope this helps to clarify. Good luck.

Anything up to 250 or so miles is acceptable for a new car, especially a lingering, untitled 2007.
It's always funny to hear people who consider a car with more than 0 miles on it used... How are you supposed to get them to the truck and off it? And furthermore, wouldn't you rather the factory actually road test your car before it's sent to the dealer?
Keep in mind that the car may have been test driven or acquired from another dealer in the past year, so it's gonna have varying mileage.

Easily could have been test driven 60 miles over the course of a year. It could have come from another dealer, driven there as a swap. 60 miles is absolutely nothing to worry about.

If the Subaru is a reliable car don't worry about the mileage, I'm driving a '97 Nissan & it's a beauty, though it has needed more work in the last few years. Just don't fall out with your mechanic friend ! If you have time to deliver pizza, couldn't you drive a cab for more money ? You seem a very hardworking and enterprising person, I'm sure you'll do good.

3 to 10 used to be the norm at a chev dealer I worked at. Sometimes more miles if the dealer got the car from another dealer on trade.

That sounds reasonable because just between test drives and the odd employee drive around on a year old car, 6 miles a week isn't too bad.
