The milk solids in butter burn; clarified butter does not burn because it has had all its milk solids removed.

You shouldn't be greasing a pan to make cookies... use parchment paper instead. It's reusable, recyclable, relatively inexpensive (it comes in rolls at your grocery store) and easier!

Butter can burn. First it melts, then browns, then it smokes and burns.
If you have too much butter on the cookie sheet, wipe it with a paper towel until there's just a film of butter. Reuse the paper towel for the next cookie sheet.
Next time, use a vegetable oil instead of butter; the smoking point is higher.

Yes it can burn and become a nutty flavor. If you're just making cookies i think you'd be ok. Some sauces called for brown butter, in which case the sauce will have a nutty flavor. However, just use oil next time because butter can be really tricky to deal with sometimes.

Yes, butter burns easily. You shouldn't have to use grease for cookies anyways. The directions never say to use grease or butter.

Unless you have chunks of butter on the cookie sheet, using it to grease the sheet is no big deal. Recipes say not to grease, but they can stick. It depends on the cookie sheet. I have stoneware, which never needs to be greased, and I have airbake sheets, which I just spray with a little PAM.

Yes, butter can burn, and it seems to be really disgusting when it does. This can happen in your cookies, and also when you are melting butter.
