You need all 2 sticks... you can sub 4 Tbsp. of Crisco, though, for the other half a stick... or borrow froma neighbor.

Try this:
melt 1 stick of butter in the microwave for a few seconds in a medium sized microwavable bowl.
Add 1/2 cup sugar and a 1/2 cup brown sugar to the melted butter. Add 1 egg and a tablespoon of vanilla extract. Set that aside.
In a large bowl put 1 and 1/8 cup flour, 1 teaspoon of salt, and 1 teaspoon of baking soda. Add your butter mixture and mix well.
Add a half bag of chocolate chips and/or a half a bag of walnuts and fold gently.
Bake for 10 minutes at 350 degrees F.

You need to use the 1 1/2 sticks PLUS 1/4 cup shortening or lard to make the cookies come out right. If you have STICK margarine, use 1/2 stick of that, DO NOT USE TUB STYLE MARGARINE OR BUTTER.

Cut down the recipe in half. It's always better to use the correct ratio of ingredients because baking is chemistry. until you've made a recipe many times, it's better not to change things up. not that it couldn't make cookies with less butter, but it would not turn out the way you want.

Yes u can make them but they might not be as rich as they would if you had butter. U can use 1/2 tsp. of oil if u want.

you can make half of the batch if you wanted.
just use one stick of butter and cut the rest of the amounts of ingredients in half.
otherwise, you have to buy more butter if you want to make an entire batch.
