Even the Splenda website says not to use it:
"Can SPLENDA® be used to make candy, fudge, caramel?
The sugar content of fudge, caramel and other candy, angel food and pound cakes, and many meringues provides an important structural component which does not allow easy substitution with SPLENDA® Brand products. Complete substitution with SPLENDA® in these recipes is not recommended."
