Unless they are a 501(c)3 registered charity, you couldn't deduct it if you donate a car to them.

If they are, they'll give you a form telling you how much the sold it for (organizations generally sell donated cars) - the amount they sold it for will be your deduction. You can only take the charitable deduction if you itemize.
