If you have high body weight (irregardless of fat to muscle ratio), medium to high intensity walking over small hilly sections in town or on an elevated treadmill will be the best thing for you. If you find the hills not enough, you can add a backpack with some lead weights or rocks to up the intensity.
Bigger guys (even musclebound ones) are best to do brisk walking as their primary cardio.
Swimming is good, but its really easy to cheat at swimming & use your inertia or spend time relaxing / floating more time than you're actually exerting yourself. On its merits, swimming will do nicely to lose weight, increase cardio capacity, and especially to tone your shoulders / upper back, but its often too easy to cheat at the exercise intensity for it to be as effective in general compared to just plain old walking.
Its sad (since swimming is so much fun) but its true.
I'd eat the saturated fats. They're rich in vitamins and weird materials that you need and your body will only store what you don't use. There's a lot of good stuff in them and contrary to 1970's dietary knowledge, eating fats doesn't make you fat. Unless of course you're eating steak gristle for your meals... then that's another story.
I'd say keep the pastas and the breads down to a sensable level, but I don't think its a great idea to eliminate them alltogether for any extended period of time.
Drink 0 soda. None. Its terrible for you.

swimming is a good form of cardio but not a great form. most people can not swim at a high enough level of intensity for it to be used strictly for that purpose. sprinting at maximum effort is hands down the single best way to increase the resting metabolic rate after exercise, this is where real fat loss takes places. also training at maximum effort causes the greatest increase in growth hormone secretion. GH is the most powerful fat burning substance that the human body produces. when combined with a high protein diet and low Gi carbs sprinting will decrease the body fat in a relatively short period of time. elite sprinters have 3-4% less body fat than all other elite athletes including elite runners and swimmers.
all you need to do is perform 10-15 minutes of all out sprinting. something like a warm up run for 5-7 minutes. then a 100 yard/meter all out sprint then walk for 100 yards, etc. then repeat. once you complete 10 of these cycles you are done, do this 3x a week.

Swimming is excellent cardio. It's also awesome at developing the shoulders. I swam competively as a child for yrs, now as an adult my shoulders respond very quickly to weight training and are still quite developed.
